They say you can’t teach an old dog new tricks. Thank goodness the same isn’t true for bourbon.

While our distilling team is mainly focused on crafting bourbon the old-fashioned way, we also spend a good deal of time experimenting and trying new things.

For us, there are two ways we do this. One, is by trying little things to continuously improve the process for our traditional whiskeys. As our Master Distiller Jacob Call says, “I’ve learned there is no magic bullet to making good whiskey. Instead, it’s about getting every ingredient and every step of the process just right.” It’s things like experimenting with different grain types and barrel entry proofs here and there. We’re proud of our bourbon but we never stop on our quest to make it the best ever.

Two, is by trying completely new things. Some work out great, and some not so much. For example, right now, we have whiskey aging in the rickhouse in a variety of different barrel types. We have various wine barrels and rum barrels that we are using to finish our whiskey in for some limited offerings.
